Vankaya Dosakaya Pachadi/Brinjal Cucumber Chutney
Brinjal/Vankaya - 2 big
Cucumber finely chopped-1/2 cup
Mustard seeds - 1tsp
Method of preparation
1)Wash the brinjals and cut them in to small pieces.Drop them in salt water till you use it.
2)Heat a tsp of oil in a pan.Add chopped green chillies to it and fry for a minute.
3)Add brinjal pieces,garlic,salt and cook them covered till the brinjals are soft and cooked well.Turn off the stove and let it cool.
4)Now blend it adding jeera and tamarind pulp.
5)Add the chopped cucumber pieces to the chutney and mix well.
6)Heat a tsp of oil in other pan and do the seasoning with mustard seeds,urad dal,chana dal,turmeric,Red chilli and curry leaves.
7)Goes well with hot rice and ghee.
