Kobbari pala payasam/Coconut Rice Pudding




Ingredients

Cooked Rice-1 cup
Coconut Milk-2 cups
Milk-1 cup
Elaichi/cardamon powder-1tsp
Sugar-1/2 cup
Jagerry-1/2 cup
Nuts
Ghee-2tsp

Method of preparation

1)Take a pan add cooked rice,milk,sugar and jagerry.Cook till the sugar and jagerry melts.
2)Add coconut milk,1tsp ghee,cardamon powder and cook for 10 more minutes.
3)Heat 1tsp of ghee in a pan and fry the nuts.
4)Add nuts to the coconut payasam.

Guddu paluposina Kura/Eggs in milk Gravy






Ingredients

Eggs-3
Onion-1 Big
Green chillies chopped-3
Chana dal-1 tsp
Urad dal-1tsp
Mustard Seeds-1tsp
turmeric-a pinch
Red chilli powder-1/2tsp
Milk-1/2 cup
Curry leaves
Salt

Method of preparation

1)Boil the eggs and remove the shell.Make small cuts with knife and keep aside.
2)Heat 1tsp of oil in a pan and add mustard seeds,urad dal,chana dal.When mustard seeds start to splutter add chopped onions,green chillies,turmeric,curry leaves.
3))When the onions are light brown add salt,red chilli powder and fry for a minute.
4)Add milk and eggs to the onion gravy.Cook till milk evaporates.
5)Serve it with hot rice.

Cabbage kobbari iguru/Cabbage coconut fry



Ingredients

Cabbage-2 cups
Fresh grated Coconut-1/2 cup
onion-1 small
Green chillies-4
red chilli powder-1tsp
Turmeric-a pinch
Mustard seeds-1tsp
Urad dal-1tsp
Chana dal-1tsp
Curry leaves
Salt

Method of preparation

1)Chop the cabbage and keep aside.
2)Heat 1tsp of oil in a pan and add mustard seeds,urad dal,chana dal.When mustard seeds start to splutter add chopped onions,green chillies,turmeric,curry leaves.
3)When the onions are light brown add chopped cabbage and cook for 5-10 minutes till the cabbage is soft.
4)Add salt,Red chilli powder and stir for a minute.
5)Finally add the grated coconut and cook for 5 more minutes.
6)Serve it with hot rice.

Tomato Dosa



Ingredients

Urad Dal/Minapappu-1 cup
Rice-2 cups
Tomatoes-2 Big
Salt
Oil

Method of preparation

1)Soak urad dal and rice separately for 6 hours.
2)Blend them in to smooth batter.Ferment the batter overnight.
3)Take a tsp of oil in a pan add chopped tomatoes to it.Cook for 10 minutes.Let it cool and make puree from it.
4)Add the puree and salt to the batter.
5)Heat the dosa tawa and grease it with some oil.Take a laddle full of dosa batter drop it on tawa.Spread it in circular motions to make dosa.Drizzle few drops of oil on the edges of dosa.
6)Serve it hot with any chutney or podi.

Plain Paratha






Ingredients

All purpose Flour-1 cup
water
Salt
oil

Method of preparation

1)Take a bowl add the flour,salt,2tsp of oil and mix well add water to it and make it a soft dough.Let it rest for 30 minutes covered with a damp cloth.
2)Make small balls from the dough.Roll it like thin chapathi and brush oil on top of it.Fold it like step wise in and out as shown below.

3)Make the folded one in to a circle.

4)Press it with your hand and roll it like a chapathi.
5)Heat the tawa and fry the paratha adding oil drops on the edges of it.When golden brown spots appear on it turn it the other side.
6)Serve it with any spicy gravy.

Spicy Egg Pulav





Ingredients

Basmati Rice/Long grain Rice-2.5 cups
Eggs-3
onion- 1 Big
Tomato-1 Big
green chillies-4
cloves-3
cinnamon stick-1 small
cardamon - 2
Bay leaf-2
Ginger and garlic paste-2 tsp
coriander powder-2tsp
Cumin powder-1tsp
Garam Masala-1tsp
Red chilli powder-1 tsp
mint leaves-1/2 bunch
coriander leaves-1 bunch
Turmeric-a pinch
lemon-1
Ghee-2tsp
oil-2tsp

Method of preparation

1)Boil the eggs remove the shell and keep aside.
2)Soak the rice for 30 mins.
3)Take a pan add ghee and 1tsp of oil.After it is hot add the cloves,cinnamon,cardamon,bay leaf,mint leaves,turmeric,coriander leaves,onions,green chillies and fry till the onions are golden brown.
4)Add ginger garlic paste and fry for a minute.Now add the tomatoes,coriander powder,cumin powder,garam masala,red chilli powder,salt and cook for 5 minutes.
5)Add 1tsp of oil in a pan and fry the boiled eggs till golden brown and keep aside.
6)Add drained rice to it.Add 3.5 cups of water and cook it in electric rice cooker.
7)When the rice is 3/4th done add fried eggs and cover the lid.
8)After the rice is done add some lemon juice and coriander leaves.
9)Serve hot with raita.

Masala Majjiga/Spiced Buttermilk





I used a traditional buttermilk churner to make this.We call it kavvam in telugu.




Tip to avoid sunstroke:
Take a cup of cooked rice.Add 2 cups of warm milk and a tsp of curd to it.Leave it overnight.Have that curd rice as breakfast in the morning if you need to go out in hot summer.

Banana lassi




Ingredients

Banana-1

Curd-1/2 cup
Water-1/2 cup

Method of preparation

1)Blend curd,banana,sugar,water for a minute.
2)Serve it with crushed ice.

Cilantro Raitha/kothimeera perugu pachadi



Ingredients

Curd-1 cup
Cilantro leaves-1/4 cup
Onions chopped-1/4 cup
Green chillies chopped-2
Salt

Method of preparation

1)Beat the curd in to smooth paste.
2)Blend the cilantro/coriander leaves along with stems in to smooth paste.
3)Mix cilantro paste,salt,onions,green chillies with curd.
4)Sprinkle some coriander leaves on the top.
->Serve it with any spicy rice like biryani..

Vankaya jeedipappu kura/Brinjals in Cashews Gravy




The original recipe was in a nice white color(without tomatoes).Dont know the reason why my hubby hates to eat white gravies..He decides the side dish by its appearance and flavor whether to taste or not..So I modified the original recipe of this dish adding tomatoes and replaced white pepper powder with red chilli powder.

Ingredients

Indian eggplants- 6
Onion-1 medium
Tomato-1 big
Roasted Cashews-1/2 cup
Gingergarlic paste-1 tsp
Red chilli powder-1tsp
Coriander powder-1tsp
Green chillies-3
cloves-2
cumin powder-1 tsp
Turmeric-a pinch
coriander leaves
Curry leaves
Salt
Oil

Method of preparation

1)Blend tomato and 1/4 cup cashews in to fine paste.
2)Blend other 1/4 cup cashews to a coarse powder.
3)Wash the eggplants and cut off the stems, make a cross shape slit on the other end.Wipe it with a dry cloth so that there is no moisture on it.Heat 1tsp of oil in a pan drop these eggplants to it and close the lid for 5 minutes.Let them cook till they are soft.One can use 2 Chinese eggplants too.Just cut them length wise in to big pieces and cook them on steam the same way.
4)Take another pan add 2 tsp of oil to it.When it is hot add the chopped onions,cloves,curry leaves,turmeric,green chillies and fry till the onions are light brown.Add the ginger garlic paste and fry for 1 more minute.
5)Add the ground cashew tomato paste to it and cook till the tomatoes are well cooked.
6)Add the red chilli powder,salt,coriander powder,cumin powder and coarsely blended cashew powder.Add fried eggplants to the gravy.Add some water to it and cook for 5 more minutes.
7)Finally garnish with coriander leaves and cashews.This goes well with rice and rotis.

Tomato Nuvvula(Sesame seeds) chutney



Ingredients

Tomatoes-5
Sesame Seeds/Nuvvulu-1/2cup
Garlic pods-3
Jeera-1 tsp
Green chillies-4
Tamarind Pulp-1tsp
salt
oil

For Tempering

Chana dal-1 tsp
Urad dal-1tsp
Mustard Seeds-1tsp
turmeric-a pinch

Method of preparation

1)Roast the sesame seeds without oil till light brown.
2)Take half tsp of oil in a pan and add green chillies and fry them.
3)Blend the green chillies,sesame seeds to powder and keep aside.
4)In the same pan cook the tomatoes till water from it evaporates.Add garlic,salt,tamarind pulp to it.Keep it aside and let it cool.
5)Now blend the tomatoes,blended sesame seeds powder,jeera to a smooth paste.
6)Heat a tsp of oil in other pan and do the seasoning with mustard seeds,urad dal,chana dal and turmeric.
7)serve it with hot rice or dosas.

Jilledu Kayalu





Ingredients

Rice Flour-1 cup
Coconut-1/2 cup
Jagerry-1/2 cup
Cardamon Powder-1/2 tsp
Ghee
Water

Method of preparation

1)Mix riceflour with water,2tsp ghee and make it in to stiff dough.
2)Take a pan add jagerry to it when it melts completely add grated coconut,Cardamon Powder to it and mix well.Stir it till it becomes thick.Turn off the heat.
3)Make coconut mixture in to small balls.

4)Take the rice flour dough make lemon size balls from it.Press it with your hand like a small chapathi.Place the coconut ball mixture in to it.

5)Fold it in to a ball by closing the coconut ball by rice flour dough just like shown in above picture.Make jilledu kayalu shape from it..
6)Grease the idli plate with some ghee.Place these in the idli stand and cook them on steam just like idlis for 10 minutes.

7)Let them cool for 15 minutes and serve them.

Spinach/Palak/Palakura Chutney




Ingredients

Spinach/Palak/Palakura-1 lb
Green chillies-6
Garlic pods-3
Roasted Peanuts-1/2 cup
Tamarind pulp-1tsp
Jeera-1tsp
Salt
Oil-2tsp

For seasoning

Mustard seeds - 1tsp
Urad dal-1tsp
Chana dal-1tsp
Turmeric-a pinch
Curry leaves

Method of preparation

1)Wash and chop the spinach finely and keep it aside.
2)Take a pan heat 1tsp of oil.Add green chillies,garlic pods and fry for 1 minute.
3)Add chopped spinach to it and fry till it is soft.Add jeera,salt and turn off the heat.
4)Add peanuts to the blender and run it for half minute.Now add the cooked spinach,tamarind pulp to it and run the blender till smooth paste.
5)Heat a tsp of oil in other pan and do the seasoning with mustard seeds,urad dal,chana dal,turmeric,curry leaves.
6)serve it with hot rice.

Kakarakaya vepudu/Bittergourd Fry



Ingredients

Bitter gourd/Kakarakaya/Karela-5 small
Onion-1 small
Green chillies-2
Red chilli powder-1/2tsp
Turmeric-a pinch
Jagerry-1 small cube
Oil-2tsp

For seasoning
Urad dal/Minapappu-1tsp
Chana dal/Senagapappu-1tsp
Mustard seeds -1tsp
Jeera-1/2tsp
Red chilli-1
Curry leaves

Method of preparation
1)Cut Bittergourd in to small pieces.Boil them in hot water.Let it cool squeeze the water from it and keep it aside.
2)Heat oil in a pan and add the seasoning and turmeric.Add chopped onions,green chillies to it.
3)When the onions are light brown add bitter gourd pieces to it.Fry it for 10 minutes.Add salt,red chilli powder and finally jagerry.Fry it for 3 more minutes.
4)Serve it with hot rice.

Sponge Cake





Sponge cake(Not this recipe) is the first baking experiment for me nearly 2 years back.I used my oven to store my cookery pots till then..When i visited my cousin once i learned to bake a cake from her....Coming to the recipe i got this recipe from a website a couple of months back....

Ingredients

All purpose Flour/Maida-1cup
Sugar-1 cup
Milk-1/2 cup
Butter-1/4 cup
Eggs-2
Baking powder-1tsp
Cardamon powder/vanilla essence-1tsp

Method of Preparation

1)Beat eggs and sugar till foamy.
2)Add maida/flour to it slowly and mix it well without lumps.
3)Add cardamon powder/essence,baking powder to it and mix well.
4)Add hot milk and butter to it and mix it.
5)Grease a cake pan and pour the batter to it.
6)Preheat the oven for 5 minutes at 350F.
7)Keep the cake tray in the oven and bake it for 15-20 minutes.
8)Insert a tooth pick in to it and check if the cake is done.It should come out clear.

Chicken Nuggets



Ingredients

Skinless Boneless chicken Breasts-2
Pepper-1tsp
All purpose flour-1/2 cup
Egg-1
Bread crumbs(seasoned)-1/2 cup
salt
Oil-To deep fry

Method of preparation

1)Cut the chicken breast in to pieces and blend them or you can finely chop the chicken.
2)Add salt,pepper to chicken and make small round balls.
3)Beat egg in a bowl and keep aside.
4)Spread bread crumbs in a plate.I used italian seasoned bread crumbs.It contained parsley and cheese.You can use plain bread crumbs too.
5)Take another plate and spread all purpose flour.I added a tsp of cornflour.Its not added in original recipe.
6)Take the chicken balls roll it on all purpose flour,dip it in egg mixture and finally roll it in bread crumbs.Press it to nugget shape and keep aside.
7)Take a kadai and add oil to it.When it is hot add the nuggets and deep fry them till golden brown.
->You can bake them in oven if you count for calories.

Aratikaya Kobbari iguru/Plantain coconut fry



Ingredients

Raw plantain/kura aratikaya-1
coconut-1/4 cup
Green chillies-2
Garlic pods-2
Jeera-1tsp
Chana Dal- 1tsp
Urad Dal-1 tsp
Mustard seeds-1tsp
curry leaves
Turmeric-a pinch
Red chilli Powder-1tsp
salt
oil

Method of preparation

1)Peel the banana with a peeler.Cut it in to small pieces.
2)Heat 1tsp of oil in a pan and do seasoning with chana dal,urad dal,mustard seeds,jeera,turmeic,garlic pods and curry leaves.
3)When mustard,jeera starts to splutter add the banana pieces to it.Fry till they are cooked.Add salt and red chilli powder to it.
4)Add fresh grated coconut to it and stir for 2-3 minutes.
5)Serve it with hot rice as a side dish along with sambar/rasam.

Perugu Attu/Curd Dosa




Ingredients

Curd-3.5 cups
Sooji/Upma ravva-1.5 cups
onion-1 small
Green chillies-4
Buttermilk-1 cup
Salt
oil

Method of Preparation

1)Mix curd and sooji/ravva and leave it overnight.
2)Add salt to it before making dosa.
3)Finely chop onions and green chillies.
4)Add some buttermilk to dosa batter if it is very thick.The consistency of batter should be a bit thick than our regular dosas.
5)Heat the dosa tawa and grease it with some oi.Take a laddle full of dosa batter drop it on tawa.Spread it in circular motions to make dosa.

6)Drizzle few drops of oil on the edges of dosa.Sprinkle some chopped onions and green chillies on the top.

7)When the surface of dosa is nice brown color fold it and take it in to a serving plate.
->serve it hot with any chutney.

Chicken chettinad



Ingredients

Chicken-1 lb
Onion-1 Big
Tomatoes-2 medium
Fennel Seeds-1tsp
Mustard Seeds-1tsp
Pepper Powder-2tsp
Jeera-1tsp

Bay Leaf-1
Cardamon-4
Cinnamon stick-1 small
Coriander powder-2tsp
Jeera powder-1tsp
Turmeric-a pinch
Ginger garlic paste-2tsp
Red chilli powder-1/2tsp
Curry leaves-1 string
coriander leaves
salt
Oil-2tsp

Method of preparation

1)Wash the chicken and cut it in to small pieces.Add turmeric,salt,and keep it aside for 10 minutes.
2)Heat 2tsp of oil in a pan.When it is hot add mustard seeds,jeera when they start to splutter add cloves,cinnamon,Bay leaf,cardamon,fennel seeds,chopped onions,curry leaves and fry till the onions are light brown.
3)Add 2 tsp of ginger garlic paste and fry for a minute.
4)Add chopped tomatoes and cook till tomatoes are mashed and cooked well.Add coriander powder,jeera powder to the gravy.
5)Add the chicken pieces and cook it covered for 10 minutes.Dont add any water to the gravy let it cook with the juices oozing out from the chicken.
6)Check the spices.After chicken is well cooked add pepper powder to it.
7)Garnish with coriander leaves.
8)This goes well with rice and rotis.

Sambar Rice



Ingredients

Rice-1 cup
Toor Dal-1 cup
Shallots- 8
Sambar powder-2 tsp
Tamarind pulp-2 tsp
Coriander Powder-1tsp
Red chilli powder- 1tsp
Turmeric - a pinch
Green chillie-3
coriander leaves
Ghee/oil-1tsp

For seasoning
Urad dal-1tsp
Chana dal-1tsp
Mustard seeds-1tsp
Jeera-1tsp
red chilli-1
Garlic pods-4
curry leaves

Method of preparation

1)Wash rice and keep it aside for 10 minutes.
2)Wash toor dal and pressure cook it till one whistle.
3)In an electric cooker add rice,toor dal,tamarind pulp,sambar powder,salt,red chilli powder,coriander powder.
4)Heat a tsp of ghee in a pan and do the seasoning with mustard seeds,urad dal,chana dal,turmeric,garlic pods,curry leaves.Add shallots,green chillies to seasoning and toss them for a minute.
5)Add the seasoning to rice rice and dal mixture.Add 3.5 cups of water and cook till done.
6)Serve it hot with any veggie fry and papad.
->If using a pressure cooker cook for 10-15 minutes.

Aratikaya Perugu pachadi/plantain curd chutney



Ingredients
Raw plantain/kura aratikaya-1
Green chillies-2
Red chillies-2
Tamarind Pulp- 1/2 tsp
Garlic pods-3
Jeera-1tsp
curd-1/4cup
salt
oil

For Tampering

Chana Dal- 1tsp
Urad Dal-1 tsp
Mustard seeds-1tsp
curry leaves
Turmeric-a pinch

Method of preparation

1)Heat 1 tsp of oil in a pan.Add red chillies,green chillies,garlic pods,jeera and fry for a minute and keep aside.
2)Cut Plantain,aratikaya in to slices and boil them till soft.

3)Peel the skin of plantain and mash it.
4)Blend the roasted green chillies,red chillies,garlic,jeera.Add the mashed banana,salt and curd.
4)Heat 1tsp of oil in a pan and do seasoning with chana dal,urad dal,mustard seeds,turmeic,curry leaves.
5)It goes well with hot rice and a gallop of ghee.
->My grandma used to add curd just before we eat chutney so that it will be spicy...

Banana Cake



I had some ripen bananas lying down on the counter top.So thought of using them..I got this recipe from some website.I substituted butter with oil and vanilla flavor with cardamon powder.

Ingredients

All purpose Flour/Maida-1.5 cups
Sugar-1 cup
Banana-1 cup
Eggs-2
Baking soda-1/2tsp
Cardamon Powder-1tsp
oil-1/2 cup

Method of Preparation

1)Peel bananas and make them paste.

2)Add beaten eggs to banana paste.Add oil,sugar,cardamon powder and beat again.
3)Add flour slowly to batter and beat it continuously.

4)Add soda to batter and mix well.

5)Preheat oven to 350 degrees.
6)Grease baking pan with oil or butter.Add cake batter to it.
7)Bake it for 20-25 minutes.Use a toothpick or knife to check if its done.It should come out clear.
