Simple vankaya fry




Ingredients

Brinjals-4
Crushed garlic-2 pods
Red chilli powder-1 tsp
Mustard seeds - 1tsp
Urad dal-1tsp
Chana dal-1tsp
Turmeric-a pinch
curry leaves
salt
oil

Method of preparation

1)Cut brinjal in to small pieces and put them in salt water till you use them.
2)Heat a tsp of oil in a pan and do the seasoning with mustard seeds,urad dal,chana dal,turmeric,curry leaves,crushed garlic.
3)Take brinjals from water and add them to the seasoning and fry till they are
soft and cooked well .Add salt,redchilli powder and fry for 1 more minute.
4)Serve it with hot rice and sambar.
