Coconut Rice


Rice-4 cups
Coconut milk-2.5 cups
Onion-1 Big
Green chillies-4
Cinnamon stick-1 small
Bay leaf-1
Ginger garlic paste-2tsp
Coriander powder-1tsp(optional)
Water-5 cups

Method of preparation

1)Wash the rice add 5 cups of water and soak it for 15 minutes.You can use the basmati rice for good flavour I used the sonamasoori rice.
2)Heat 2tsp of ghee in a pan add cloves,cinnamon,cardamon,small bay leaf,chopped nions,green chillies.When the onions are light brown add the ginger garlic paste and fry for 2 more minutes.Add the coriander powder,salt,jeera,coriander leaves and coconut milk.
3)Add the above mixture to the rice and cook it for 3 whistles in a pressure cooker
or you can cook it in a rice cooker.
4)I added the coriander powder which changed the color of coconut rice you can omit it.
5)You can serve it hot with any spicy gravy.I served it with potato kurma,mushroom tomato gravy and onion raita.
