Cauliflower fry



Ingredients

Cauliflower florets-2 cups
Onion-1
Ginger garlic paste-1tsp
Green chillies-2
coriander powder-1tsp
Red chilli powder-1 tsp
Mustard seeds - 1tsp
Urad dal-1tsp
Chana dal-1tsp
Turmeric-a pinch
curry leaves
coriander leaves
salt
oil

Method of preparation

1)Heat a tsp of oil in a pan and do the seasoning with mustard seeds,red chilli,urad dal,chana dal,turmeric and curry leaves.
2)Add chopped onions to it and fry till they are light brown.Add 1tsp of ginger garlic paste and fry for a minute.
3)Add cauliflower florets and fry till they are cooked well.
4)Add salt,redchilli powder and coriander powder and fry for 1 more minute.
5)Garnish with coriander leaves.

Pesarapappu charu/Moong dal rasam


Ingredients

Yellow Moong Dal/Pesara pappu - 1 cup
Onions - 3
Tomato-1
Green chillies-3
lemon juice(From 2 lemons)
chilli powder- 1tsp
turmeric a pinch
coriander leaves
Water
salt
oil

For seasoning

Urad dal-1tsp
Chana dal-1tsp
Mustard seeds-1tsp
Jeera-1tsp
Garlic pods-4
curry leaves


Method of preparation

1)Pressure cook the Moong dal for 3 whistles.Let it cool and make paste in blender.
2)Heat 2tsp of oil in a pan add the seasoning.Then add onions,green chillies,tomato,turmeric and fry for a while.Add some water and bring to boil.
3)Finally add the blended Moong dal,salt and red chilli powder.Cook for 10 more min.
4)Turn off the heat and add the lemon juice and coriander leaves.
->You can add veggies to it.

Pappu chekka/chikki




Ingredients

Peanuts-2 cups
Jagerry crushed-1.5 cups
Sugar-1/4 cup
Cardamom/elaichi powder-1tsp
water-1/4 cup
Ghee-1/2 tsp

Method of preparation

1)Take a pan and dry roast the peanuts.Let it cool and remove the skin.
2)Take another pan add sugar,jagerry and 1/4 cup water and stir well.Take some water in a plate and drop the sugar syrup we should be able to form a ball from it.
3)Add cardamom powder,peanuts to the jagerry syrup and stir well.
4)Grease a plate with ghee and drop peanut mixture to it.Let it cool and cut it in to small pieces.

Pesarattu upma/Greengram dosa




Ingredients

Pesalu/whole green gram -1 cup
Ginger-a small piece
onion-1 small
green chillies-2
Salt
oil

Method of preparation

1)Soak green gram/pesalu overnight.Blend them along with ginger,green chillies and salt.
2)Heat the dosa tawa and grease it with some oil.Take a laddle full of batter drop it on tawa.Spread it in circular motions to make dosa.Drizzle few drops of oil on the edges of dosa.
3)Sprinkle some chopped onions on it.
4)Serve it with upma and ginger chutney.

Sunnundalu/Urad dal ladoos




Ingredients

Urad dal-1 cup
Sugar-3/4 cup
Elaichi powder/cardamom powder-1tsp
Ghee-1/4 cup(Approx)

Method of preparation

1)Take a pan and dry roast urad dal without any oil/ghee till light brown.
2)Blend the urad dal to fine powder in a blender and keep aside.
3)Blend the sugar to fine powder.
4)Take a bowl add urad dal powder,sugar powder,Elaichi powder,ghee and mix well.
5)Make ladoos from it.If you cant make out ladoos from it add some more ghee and try to shape them.

Watermelon Juice



Ingredients

Watermelon cubes-1 cup
Sugar-1tsp
water-1 cup
Ice cubes

Method of preparation

1)Blend watermelon cubes,sugar,water for a minute.
2)Serve it chilled with ice cubes.

Dark Choclate Bownies




Ingredients

Butter-1/2 cup
Chocolate syrup(Hershey's)-1/2 cup
Sugar-1 cup
Eggs-2
Maida/allpurpose flour-1 cup
vanilla essence-1 tsp
Salt- a pinch

Preparation

1)Take a bowl beat eggs in it.Add butter,sugar to the eggs and beat them till creamy.
2)Add the all purpose flour to it and mix well.Add chocolate syrup,vanilla essence,salt and mix well.
3)Preheat the oven at 350.Grease the pan add brownie batter to it and bake it for 25 minutes.
4)Insert a toothpick in the middle of pan.It should come out clean
5)Let them cool for 10 minutes and cut them.
->I made this with only half of the above ingredients since it is the first attempt.

Paneer Kurma




Ingredients

Paneer cubes(Big)-8
onion-1 big
Green chillies-3
Cloves-2
Coriander powder-1tsp
Garam masala-1tsp
Jeera powder-1tsp
coriander leaves
Turmeric-a pinch
Ginger garlic paste-1tsp
Red chilli powder-1tsp

To make paste

Poppy seeds-3tsp
Coconut-5 tsp
cashews-3

Method of preparation

1)Take a pan fry poppy seeds without oil for a minute.
2)Blend poppyseeds,coconut and cashews in to a paste.
3)Heat 2tsp of oil in a pan.When it is hot add turmeric,cloves,green chillies,chopped onions and fry till the onions are light brown.
4)Add 1 tsp of ginger garlic paste and fry for 1 more minute.
5)Add blended paste,coriander powder,jeera powder,garam masala powder,red chilli powder and finally paneer cubes.
6)Garnish with coriander leaves.
->This goes well with rice and rotis.

Tomato chicken



Ingredients

Chicken-1 lb
Onion-1 Big
Tomatoes-2 Big
Green chillies-2
Cloves-2
Cinnamon stick-1 small
Coriander powder-1tsp
Garam masala-1tsp
Chicken masala powder-1 tsp
Turmeric-a pinch
Ginger garlic paste-2tsp
Red chilli powder-1tsp
Lemon juice-2tsp
coriander leaves
salt
Oil-3tsp

Method of preparation

1)Wash the chicken and cut it in to small pieces.Add turmeric,red chilli powder,salt,1tsp ginger garlic paste and keep it aside for 1 hour.
2)Heat 3tsp of oil in a pan.When it is hot add cloves,cinnamon,chopped onions,green chillies and fry till the onions are light brown.
3)Add 1 tsp of ginger garlic paste and fry for 1 more minute.Add chopped tomatoes to it and cook for 5 minutes till they are cooked well.
4)Add the chicken pieces and cook it covered for 5 more minutes.
5)Add coriander powder,chicken masala powder,garam masala powder and cook it till the chicken is well cooked.
6)Garnish with coriander leaves and add lemon juice to it.
->Goes well with rice and rotis.

Simple Carrot chutney



Ingredients

Grated Carrot-1 cup
Red chillies-4
Lemon juice-1/4 cup

Chana Dal- 1tsp
Urad Dal-1 tsp

Turmeric-1/4tsp
Salt
Oil-1tsp

Method of preparation

1)Heat 1 tsp of oil in a pan.Add crushed red chillies,jeera,chana dal,urad dal,mustard seeds,turmeic,curry leaves and fry till dals are light brown.
2)Turn off the heat add finely grated carrot,salt and lemon juice.
3)Serve it with hot rice or roti.

Ravva(sooji) Punugulu





Ingredients

Sooji/Upma ravva-2 cups
Curd-1.5 cups
onion-1 Big
Green chillies-3
Salt
oil

Method of Preparation

1)Mix curd and sooji/ravva and leave it for 30 minutes.The batter should be thick.
2)Add salt,finely chopped onions,green chillies and mix well.
3)Heat a deep bottomed pan and add oil to deep fry.
4)Make small balls from the batter and gently drop in to the oil.Fry till golden brown.
5)This tatses good with Tomato peanut chutney.

Vankaya Dosakaya Pachadi/Brinjal Cucumber Chutney


Ingredients

Brinjal/Vankaya - 2 big
Cucumber finely chopped-1/2 cup
Green chillies-4
Garlic pods-3
Jeera-1tsp
Tamarind pulp-1tsp
salt
Oil-2tsp

For seasoning

Mustard seeds - 1tsp
Urad dal-1tsp
Chana dal-1tsp
Turmeric-a pinch
Red chilli-1
curry leaves

Method of preparation

1)Wash the brinjals and cut them in to small pieces.Drop them in salt water till you use it.
2)Heat a tsp of oil in a pan.Add chopped green chillies to it and fry for a minute.
3)Add brinjal pieces,garlic,salt and cook them covered till the brinjals are soft and cooked well.Turn off the stove and let it cool.
4)Now blend it adding jeera and tamarind pulp.
5)Add the chopped cucumber pieces to the chutney and mix well.
6)Heat a tsp of oil in other pan and do the seasoning with mustard seeds,urad dal,chana dal,turmeric,Red chilli and curry leaves.
7)Goes well with hot rice and ghee.

Papaya Halwa



Ingredients

Papaya chopped-2cups
Milk-1 cup
Sugar-1 cup
Elaichi/Cardamon powder-1.5tsp
cashews and raisins-5 each
Ghee-3tsp

Method of preparation

1)Blend 1.5 cups papaya in to paste.
2)Heat 3tsp of ghee in a pan fry cashews and raisins till cashews are golden brown.Add blended papaya paste and remaining 1/2 cup finely chopped papaya pieces to it and fry for 5-8 minutes.
3)Add milk and sugar to it and stir well till it becomes thick paste.
4)Add cardamon powder and stir it.

Coconut Dosa






Ingredients

Urad Dal/Minapappu-1 cup
Rice-2 cups
Coconut milk-1.5 cups
Grated fresh Coconut-3/4 cup
Salt
Oil

Method of preparation

1)Soak urad dal and rice separately for 6 hours.
2)Blend them in to smooth batter.Ferment the batter overnight.
3)Add the coconut milk,1/2 cup grated coconut and salt to the batter.
4)Heat the dosa tawa and grease it with some oil.Take a laddle full of dosa batter drop it on tawa.Spread it in circular motions to make dosa.Drizzle few drops of oil on the edges of dosa.
5)Sprinkle some grated coconut on top.
6)Serve it hot with any chutney or podi.

Semiya Kesari



Ingredients

Semiya/Vermicelli-1 cup
Sugar-3/4 cup
Elaichi/cardamon powder-1tsp
Water-2.5 cups
Cashews-5
Raisins-5
Ghee-2tsp

Method of preparation

1)Heat 2tsp of ghee in a pan fry raisins and cashews till golden brown and keep aside.
2)Add semiya to the same ghee and fry till golden brown and keep aside.
3)Take another pan add water and sugar to it.Stir till sugar dissolves.Add semiya to it.Cook till the semiya is soft.
4)Add elaichi/cardamon powder and roasted cashews,raisins to it.

Broccoli Fry

3)Add broccoli and fry for 5 to 10 minutes till it is cooked well.
4)Add salt,redchilli powder and fry for 1 more minute.
5)Serve it with hot rice.

Egg Masala Fry



Ingredients

Eggs-3
Onion-1 small
Green chillies-4
Red chilli powder-1tsp

Cumin powder-1tsp

Urad dal-1tsp

Method of preparation

1)Boil the eggs remove the shell and keep aside.
2)Heat 1tsp of oil in a pan and add mustard seeds,urad dal,chana dal.When mustard seeds start to splutter add chopped onions,green chillies,turmeric,curry leaves.
3)When the onions are light brown add ginger garlic paste and fry for 1 more minute.Add salt,red chilli powder,cumin powder,coriander powder and mix well.
4)Finally add the eggs and fry for 3 more minutes.
5)Serve it with hot rice.

Dosa with leftover rice/cooked rice dosa



Ingredients

Leftover Rice-1/2 cup
Besan/Gram Flour-1 cup
Onion-1
Green chillies-3
Red chilli powder-1tsp
Salt
oil

Method of preparation

1)Blend besan,cooked rice,salt and red chilli powder to a smooth paste adding some water.
2)The dosa batter consistency should be thick in consistency than the regular ones.

3)Heat the dosa tawa and grease it with some oil.Take a laddle full of dosa batter drop it on tawa.Spread it in circular motions to make dosa.
4)Sprinkle some chopped onions and green chillies on top.
5)Drizzle few drops of oil on the edges of dosa.
->Serve it hot with any chutney.

Egg Fried Rice



Ingredients

Cooked rice-1 cup
Eggs-2
veggies(Carrots,Peas,beans)-1 cup
Ajinomoto-1/4tsp
Pepper-2tsp
Tomato Ketchup-1tsp

spring onions-3
Soy sauce-1tsp
Vinegar-1tsp
cloves-2
cinnamon stick-1 inch
coriander leaves

Method of preparation

1)Microwave the veggies for 5 minutes and keep aside.
2)Heat 1tsp of oil in a pan.Add cloves,cinnamon,green chillies,veggies and cook for 5 minutes.
3)Add the salt,pepper,ajinomoto,tomato ketchup,vinegar,soy sauce and cook for 2 more minutes.
4)Beat eggs in to it and stir well.Add the cooked rice to it mix well and cook for 3 minutes.
4)Garnish with coriander leaves and spring onions.

Semiya Payasam/Vermicelli Kheer




Ingredients

Semiya/Vermicelli-1/2 cup
Water-1 cup
Milk-2 cups
Sugar-1/4 cup
Elaichi powder-1tsp
Cashews-5
Raisins-5
Ghee

Method of preparation

1)Heat 1tsp of ghee in a pan.Add raisins and cashews to it.
2)When cashews are golden brown add semiya/vermicelli to it and fry till semiya is golden brown.
3)Add water to it and cook for 5 minutes.
4)Add milk,sugar and Elaichi powder and cook for 7 more minutes.
->cooking semiya in water reduces the cooking time.

Andhra Chicken Pickle


Ingredients

Chicken-1 lb
Garlic-10 pods
cloves-7
cinnamon stick-1 inch
Coriander powder-1tsp
Mustard powder-1tsp
Cardamon powder-a pinch
Methi seed powder-1/2tsp
Red chilli powder-1/2 cup
Mustard seeds-1tsp
Turmeric-2tsp
Curry leaves
Salt
Oil-1 cup
lemon juice-1/2 cup

Method of Preparation

1)Wash and cut chicken to small pieces.
2)Take water and 1/2tsp turmeric in a pan and bring it to boil.Add chicken pieces to it and cook till the chicken is well cooked.
3)Remove the chicken pieces from water and dry it on paper towels so that there is no moisture in it.
4)Heat oil in a pan and fry the chicken pieces till golden brown and keep them aside.Fry garlic and bayleaf in the same oil for a minute.


5)Let the oil cool.Add Red chilli powder,mustard powder,cardamon powder,methi seeds powder,coriander powder,salt(I added 2 tsp)and turmeric to it.Add chicken pieces,garlic and lemon juice to it and mix well.

6)Take a tsp of oil in other pan.Add mustard seeds,cloves,cinnamon and curry leaves.
Add this to the chicken pickle and mix well.
7)Store it in an air tight container and use it from next day.
->Store this pickle in refrigerator.It will be good for a month.If you are storing for long time see that the oil floats on top of the pickle.

Chicken Pakoda



Ingredients

Chicken-1lb
Maida/All purpose flour-1/2 cup
Rice flour/Corn Flour-2tsp
Onion-1 medium
Green chillies-3
Red chilli powder-1tsp
Ginger Garlic paste-1tsp
Garam masala Powder-1/2tsp
Egg-1
Salt
Curry leaves
Oil-To deep fry

Method of preparation

1)Wash and cut the chicken in to small pieces.
2)Take a bowl add chicken,maida,Rice flour,chopped onion,green chillies,ginger garlic paste,garam masala powder,egg,salt,red chilli powder and mix well.Add some water to it and make batter a bit thicker than the regular pakodis.
3)Heat oil in a pan.When it is hot gently drop the pakodis in the oil and fry them till they are golden brown.
4)Serve them hot with ketchup.

Caramel Cake



Ingredients

All purpose flour/Maida-1 cup
Sugar-1 cup
Baking powder-1tsp
Vanilla Essence-1tsp
Butter-1/4 cup
Eggs-2
Milk-1/2 cup
Warm water-2tsp

Method of preparation

1)Take a pan add 1/4 cup of sugar to it.caramelize it by Stirring it without adding any water.After it is done add 2tsp of warm water to it and keep it aside to cool it.
2)Preheat the oven to 350F heat.
3)Blend butter and remaining sugar till foamy.Add Eggs to it and beat again.
4)Add baking powder,vanilla essence and 3tsp of caramelized sugar to it.Add flour and milk alternatively to it and keep whisking.
5)Grease a cake pan and pour the batter to it.
6)Bake it in oven for 20-25 minutes.
7)Insert a tooth pick in to it and check if the cake is done.It should come out clear.

Kobbari pala payasam/Coconut Rice Pudding




Ingredients

Cooked Rice-1 cup
Coconut Milk-2 cups
Milk-1 cup
Elaichi/cardamon powder-1tsp
Sugar-1/2 cup
Jagerry-1/2 cup
Nuts
Ghee-2tsp

Method of preparation

1)Take a pan add cooked rice,milk,sugar and jagerry.Cook till the sugar and jagerry melts.
2)Add coconut milk,1tsp ghee,cardamon powder and cook for 10 more minutes.
3)Heat 1tsp of ghee in a pan and fry the nuts.
4)Add nuts to the coconut payasam.

Guddu paluposina Kura/Eggs in milk Gravy






Ingredients

Eggs-3

Cabbage-2 cups
Fresh grated Coconut-1/2 cup
onion-1 small
Green chillies-4
red chilli powder-1tsp
Turmeric-a pinch
Mustard seeds-1tsp
Urad dal-1tsp
Chana dal-1tsp
Curry leaves
Salt

Method of preparation

1)Chop the cabbage and keep aside.
2)Heat 1tsp of oil in a pan and add mustard seeds,urad dal,chana dal.When mustard seeds start to splutter add chopped onions,green chillies,turmeric,curry leaves.
3)When the onions are light brown add chopped cabbage and cook for 5-10 minutes till the cabbage is soft.
4)Add salt,Red chilli powder and stir for a minute.
5)Finally add the grated coconut and cook for 5 more minutes.
6)Serve it with hot rice.

5)Heat the dosa tawa and grease it with some oil.Take a laddle full of dosa batter drop it on tawa.Spread it in circular motions to make dosa.Drizzle few drops of oil on the edges of dosa.
6)Serve it hot with any chutney or podi.

Plain Paratha






Ingredients

All purpose Flour-1 cup
water
Salt
oil

Method of preparation

1)Take a bowl add the flour,salt,2tsp of oil and mix well add water to it and make it a soft dough.Let it rest for 30 minutes covered with a damp cloth.
2)Make small balls from the dough.Roll it like thin chapathi and brush oil on top of it.Fold it like step wise in and out as shown below.

3)Make the folded one in to a circle.

4)Press it with your hand and roll it like a chapathi.
5)Heat the tawa and fry the paratha adding oil drops on the edges of it.When golden brown spots appear on it turn it the other side.
6)Serve it with any spicy gravy.
